Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch ginger, sliced
- 4 cups chicken or pork stock
- 2 tablespoons soy sauce
- 1 tablespoon miso paste
- Salt, to taste
- Fresh ramen noodles
- Soft-boiled eggs
- Green onions, sliced
- Nori sheets
- Bamboo shoots
- Chili oil, optional
Instructions
- Heat vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, then sauté until fragrant.
- Pour in the chicken or pork stock, letting it bubble gently to a simmer. Stir in soy sauce and miso paste, seasoning with salt to taste. Let the broth simmer for about 20 minutes.
- Meanwhile, cook the fresh ramen noodles according to package instructions. Drain and set aside.
- To serve, divide the noodles into bowls, pour the hot broth over them, and arrange toppings such as soft-boiled eggs, sliced green onions, nori, bamboo shoots, and chili oil, if desired.
Notes
For a vegetarian version, use vegetable stock and add vegetables like mushrooms and bok choy. For extra spice, add fresh chili or chili oil.
