  • Fresh ramen noodles
  • Soft-boiled eggs
  • Green onions, sliced
  • Nori sheets
  • Bamboo shoots
  • Chili oil, optional


Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, then sauté until fragrant.
  2. Pour in the chicken or pork stock, letting it bubble gently to a simmer. Stir in soy sauce and miso paste, seasoning with salt to taste. Let the broth simmer for about 20 minutes.
  3. Meanwhile, cook the fresh ramen noodles according to package instructions. Drain and set aside.
  4. To serve, divide the noodles into bowls, pour the hot broth over them, and arrange toppings such as soft-boiled eggs, sliced green onions, nori, bamboo shoots, and chili oil, if desired.

Notes

For a vegetarian version, use vegetable stock and add vegetables like mushrooms and bok choy. For extra spice, add fresh chili or chili oil.
