Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons brown sugar
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 1 cup sour cream


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and brown sugar; mix until resembling wet sand. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, incorporating well.
  4. Stir in vanilla, ginger, cinnamon, nutmeg, and cloves. Mix in sour cream until combined.
  5. Pour filling over the crust and bake for 55-60 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature, then refrigerate for at least 4 hours before serving.
