Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons brown sugar
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- 1 cup sour cream
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, melted butter, and brown sugar; mix until resembling wet sand. Press into the bottom of a springform pan.
- In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, incorporating well.
- Stir in vanilla, ginger, cinnamon, nutmeg, and cloves. Mix in sour cream until combined.
- Pour filling over the crust and bake for 55-60 minutes until set but slightly jiggly in the center.
- Cool at room temperature, then refrigerate for at least 4 hours before serving.
