Description

A delicious and healthy side dish of roasted green beans coated in garlic and parmesan for a flavorful crunch.


Ingredients

  • 1 lbs. green beans
  • 2 Tbsp avocado oil (or olive oil)
  • 6 garlic cloves, minced
  • ¼ cup grated parmesan
  • ¼ tsp salt (or to taste)
  • ½ tsp black pepper
  • Lemon, to squeeze over the top (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking pan with parchment paper.
  2. Trim both ends off the green beans and place them in a large bowl.
  3. Add green beans, oil, garlic, parmesan, salt, and pepper to the bowl, and toss until fully coated.
  4. Spread the green beans in a single layer on the prepared baking pan.
  5. Roast for 15-20 minutes until cooked to your liking.
  6. Squeeze lemon over the top before serving if desired.

Notes

For extra crunch, broil for the last 1-2 minutes of cooking. Keep an eye on them to avoid burning.
