Description

Ingredients

  • 1 tablespoon olive oil (for greasing)
  • 1.5 pounds baby potatoes, halved
  • 2 pounds chicken breasts
  • 1/3 cup olive oil
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Lightly grease the crockpot with one tablespoon of olive oil.
  2. Place the halved baby potatoes in the bottom of the crockpot and arrange the chicken breasts on top.
  3. In a small bowl, mix together the remaining olive oil, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper.
  4. Pour the garlic Parmesan mixture over the chicken and potatoes, ensuring everything is well-coated.
  5. Cover the crockpot and cook on low for about 240 minutes, or until the chicken is cooked through and the potatoes are fork-tender.
  6. Garnish with freshly chopped parsley and serve warm.
