Ingredients
- 1 tablespoon olive oil (for greasing)
- 1.5 pounds baby potatoes, halved
- 2 pounds chicken breasts
- 1/3 cup olive oil
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the crockpot with one tablespoon of olive oil.
- Place the halved baby potatoes in the bottom of the crockpot and arrange the chicken breasts on top.
- In a small bowl, mix together the remaining olive oil, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper.
- Pour the garlic Parmesan mixture over the chicken and potatoes, ensuring everything is well-coated.
- Cover the crockpot and cook on low for about 240 minutes, or until the chicken is cooked through and the potatoes are fork-tender.
- Garnish with freshly chopped parsley and serve warm.
