Ingredients
- 1 tablespoon olive oil
- 2 pounds baby potatoes, halved
- 4 chicken breasts
- ½ cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning

- Black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Lightly grease the crockpot with olive oil.
- Place the halved baby potatoes at the bottom of the crockpot.
- Add the chicken breasts on top of the potatoes.
- In a bowl, mix the remaining olive oil, Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper.
- Pour the garlic Parmesan mixture over the chicken and potatoes, ensuring they are well-coated.
- Cover and cook on low for about 240 minutes, until chicken is cooked through and potatoes are fork-tender.
- Garnish with freshly chopped parsley and serve warm.
