Description

A hearty, slow-cooked dish that combines tender chicken breasts and baby potatoes in a cheesy, garlicky sauce for a cozy meal.

Ingredients

  • 1 tablespoon olive oil
  • 2 pounds baby potatoes, halved
  • 4 chicken breasts
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease the crockpot with olive oil.
  2. Place the halved baby potatoes at the bottom of the crockpot.
  3. Add the chicken breasts on top of the potatoes.
  4. In a bowl, mix the remaining olive oil, Parmesan cheese, minced garlic, Italian seasoning, salt, and black pepper.
  5. Pour the garlic Parmesan mixture over the chicken and potatoes, ensuring they are well-coated.
  6. Cover and cook on low for about 240 minutes, until chicken is cooked through and potatoes are fork-tender.
  7. Garnish with freshly chopped parsley and serve warm.

Notes

For extra flavor, marinate the chicken overnight. Avoid overcrowding in the crockpot for optimal cooking.
