Description

A flavorful and easy sheet pan dinner made with juicy chicken, crispy baby potatoes, garlic, Parmesan, and Italian herbs. Bakes in one tray for minimal cleanup and maximum flavor.


Ingredients

  • 4 pieces of chicken (breasts or thighs)
  • 1.5 lbs baby Yukon gold potatoes, quartered
  • 4 garlic cloves, finely minced
  • ⅓ cup freshly grated Parmesan cheese
  • 3 tbsp olive oil
  • ½ tsp smoked paprika
  • 1 tbsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, coat the chicken with 1.5 tbsp olive oil, minced garlic, paprika, Italian seasoning, salt, and pepper.
  3. In another bowl, toss the potatoes with the remaining 1.5 tbsp olive oil, garlic, Parmesan cheese, salt, and pepper.
  4. Arrange chicken and potatoes on the baking sheet, leaving space between pieces for crisping.
  5. Bake for 30–35 minutes, flipping potatoes halfway through the cooking time.
  6. Check that chicken is cooked through (internal temperature of 165°F or 74°C).
  7. Remove from oven and top with extra Parmesan and freshly chopped parsley before serving.

Notes

For extra crispiness, broil the tray for the last 2–3 minutes. You can also add green beans or broccoli in the last 10 minutes for a full meal.
