Description
A quick and delicious couscous dish infused with garlic and cranberries, perfect for any meal.
Ingredients
- 1 cup couscous
- 2 cups vegetable broth
- 2 cloves garlic, minced
- 1/4 cup dried cranberries
- 2 tablespoons olive oil
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add minced garlic and sauté for 1 minute.
- Stir in couscous and toast for 2 minutes.
- Add vegetable broth and bring to a boil.
- Remove from heat, cover, and let it sit for 5 minutes.
- Fluff couscous with a fork.
- Add cranberries, parsley, thyme, salt, and pepper. Mix well.
Notes
Substitute with quinoa or farro if desired. Can use chicken broth instead of vegetable broth.
