Ingredients
- 3 large sweet potatoes, peeled and cubed
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
- In a large bowl, mix melted butter, olive oil, garlic, paprika, thyme, salt, and black pepper to create a marinade.
- Toss the cubed sweet potatoes in the marinade until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, flipping halfway, until golden and crispy on the edges and tender inside.
- Garnish with parsley if desired, and serve warm.
Notes
Cut sweet potatoes into uniform pieces for even cooking. Flip halfway through roasting for the best results.
