Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, melt the butter over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Season the chicken breasts with salt, pepper, thyme, and rosemary, then place them in the skillet.
  5. Add the baby potatoes around the chicken in the skillet.
  6. Sear the chicken for about 4-5 minutes on each side until browned.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  8. Garnish with fresh parsley before serving.
