Ingredients

  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 cup chopped onions
  • 1 cup diced potatoes
  • 2 cups chopped green beans
  • 2 cups diced tomatoes
  • 6 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste


Instructions

  1. Heat a large pot over medium heat.
  2. Add the onions and garlic and sauté until the onions are translucent.
  3. Toss in the carrots, celery, and potatoes; cook for about 5 minutes.
  4. Stir in the green beans and tomatoes.
  5. Pour in the vegetable broth and add thyme and basil.
  6. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
