A quick and nutritious garden vegetable soup that’s perfect for lazy cooking days.
Ingredients
- 2 cups chopped carrots
- 2 cups chopped celery
- 1 cup chopped onions
- 1 cup diced potatoes
- 2 cups chopped green beans
- 2 cups diced tomatoes
- 6 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add the onions and garlic and sauté until the onions are translucent.
- Toss in the carrots, celery, and potatoes; cook for about 5 minutes.
- Stir in the green beans and tomatoes.
- Pour in the vegetable broth and add thyme and basil.
- Bring to a boil, then reduce heat and let it simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
