Delicious truffles made with dark chocolate and sweet potatoes, offering a healthier alternative to traditional sweets.
Ingredients
- 1 cup sweet potato, peeled and cut into 1-inch cubes
- 3/4 cup dark chocolate chips
- 2 Tbsp coconut oil
- 2 Tbsp cocoa powder
- 2 Tbsp maple syrup
- 1/4 tsp sea salt
- 1 Tbsp cocoa powder (for rolling)
Instructions
- Steam the sweet potato until very soft, about 8 minutes.
- Melt the dark chocolate chips and coconut oil together until smooth.
- In a food processor, combine steamed sweet potatoes with the melted chocolate mixture, cocoa powder, maple syrup, and sea salt. Process until smooth.
- Transfer the mixture to a freezer-safe bowl and chill until firm, about 45-60 minutes.
- Scoop the mixture into heaping 1-tablespoon portions and roll into balls, then coat with cocoa powder.
- Enjoy immediately or chill for another 15 minutes in the refrigerator or freezer.
Notes
Use high-quality dark chocolate for the best flavor. Work quickly when rolling to prevent the mixture from softening.
