Description

A delightful dessert that combines brownies and cookies into one irresistible treat, rich in chocolate flavor.


Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla
  • 85 g dark or milk chocolate chips


Instructions

  1. Preheat the oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Prepare a baking tray by lining it with parchment paper.
  2. In a heatproof bowl, combine the chopped dark chocolate and butter. Place this bowl over a pan of simmering water and stir occasionally until fully melted. Stir in vanilla extract.
  3. In a medium bowl, beat the caster sugar, demerara sugar, and eggs with an electric whisk on high speed until light and fluffy, about 5 minutes.
  4. Sift together the flour, cocoa powder, baking powder, and salt in another bowl, then add the chocolate chips.
  5. Gradually fold the melted chocolate mixture into the whipped eggs and sugars, being careful to maintain airiness.
  6. Gently fold in the dry ingredients using a spatula until just combined.
  7. Scoop tablespoons of batter onto the prepared baking tray, spacing them well apart. Bake for 12-14 minutes or until set and crackly on top.
  8. Remove from the oven, sprinkle with sea salt if desired, and let cool for about 10 minutes before transferring to a cooling rack.

Notes

Serve warm with vanilla ice cream or drizzled with chocolate sauce. Store in an airtight container for up to 3 days or freeze for 2 months.
