A fresh and easy Chickpea Cottage Cheese Bowl that’s healthy and perfect for a quick meal.
Ingredients
- 1 cup cottage cheese
- 1 cup canned chickpeas, rinsed and drained
- 1 cup diced cucumbers
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cottage cheese, chickpeas, cucumbers, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
