Ingredients

  • 2 packets of ramen noodles
  • 2 cups of mixed vegetables (bell peppers, carrots, green onions)
  • 1/2 cup of sliced almonds
  • 1/4 cup of chopped cilantro
  • 1/4 cup of sesame oil
  • 1/4 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 1 tablespoon of sugar
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste


Instructions

  1. Cook the ramen noodles according to the package instructions. Drain and let cool.
  2. In a large bowl, toss together the mixed vegetables, cooled ramen noodles, sliced almonds, and chopped cilantro.
  3. In a separate bowl, whisk together the sesame oil, soy sauce, rice vinegar, sugar, garlic powder, salt, and pepper to create the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve immediately or refrigerate for an hour for the flavors to meld.

Notes
