Ingredients
- 1 cup shelled edamame, preferably thawed if frozen
- 1/2 cup roasted peanuts
- 2 cups mixed greens, washed
- 1/4 cup red bell pepper, diced
- 1/4 cup cucumber, chopped
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed greens, edamame, red bell pepper, and cucumber. Toss gently.
- In a small bowl, whisk together soy sauce, sesame oil, and rice vinegar until combined.
- Drizzle the dressing over the salad and toss to combine, ensuring everything is coated.
- Add the roasted peanuts and toss gently, being careful not to crush them.
- Season with salt and pepper to taste and serve immediately or refrigerate for later.
