French Onion Chicken Rice Casserole

Description

A comforting casserole combining the rich flavors of French onion soup, tender chicken, and rice.


Ingredients

  • 2 cups uncooked long-grain white rice
  • 1 can French onion soup
  • 1 can cream of chicken soup
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked, shredded chicken
  • 2 cups shredded Swiss cheese
  • 1 tablespoon butter (for caramelizing onions)
  • 2 large onions, thinly sliced


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Melt butter in a skillet over medium heat and caramelize the onions for 10-12 minutes until golden brown.
  3. In a large bowl, combine the uncooked rice, French onion soup, cream of chicken soup, milk, salt, and black pepper. Mix until well combined.
  4. Fold in the cooked chicken and half of the shredded cheese into the rice mixture.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Top with the caramelized onions and sprinkle the remaining cheese over the top.
  7. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh thyme or parsley before serving.

Notes

Use leftover rotisserie chicken to save time. You can also make the casserole a day in advance and refrigerate it before baking.
