Description
A comforting casserole combining the rich flavors of French onion soup, tender chicken, and rice.
Ingredients
- 2 cups uncooked long-grain white rice
- 1 can French onion soup
- 1 can cream of chicken soup
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups cooked, shredded chicken
- 2 cups shredded Swiss cheese
- 1 tablespoon butter (for caramelizing onions)
- 2 large onions, thinly sliced
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Melt butter in a skillet over medium heat and caramelize the onions for 10-12 minutes until golden brown.
- In a large bowl, combine the uncooked rice, French onion soup, cream of chicken soup, milk, salt, and black pepper. Mix until well combined.
- Fold in the cooked chicken and half of the shredded cheese into the rice mixture.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with the caramelized onions and sprinkle the remaining cheese over the top.
- Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Garnish with fresh thyme or parsley before serving.
Notes
Use leftover rotisserie chicken to save time. You can also make the casserole a day in advance and refrigerate it before baking.
