Ingredients
- 2 cups long-grain white rice
- 1 can (10.5 oz) French onion soup
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked, shredded chicken
- 2 cups shredded Swiss cheese
- 2 tablespoons butter
- 2 large onions, thinly sliced
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Melt butter in a skillet over medium heat and caramelize the sliced onions for 10-12 minutes until golden brown.
- In a large bowl, mix rice, French onion soup, cream of chicken soup, milk, salt, and black pepper.
- Fold in the shredded chicken and half of the cheese into the rice mixture.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with caramelized onions and the remaining cheese.
- Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly.
Notes
Serve with a garnish of fresh thyme or parsley to enhance flavors.
