French Onion Chicken Rice Casserole

Description

A comforting casserole featuring layers of savory chicken, caramelized onions, and creamy rice, perfect for family dinners.


Ingredients

  • 2 cups long-grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked, shredded chicken
  • 2 cups shredded Swiss cheese
  • 2 tablespoons butter
  • 2 large onions, thinly sliced


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Melt butter in a skillet over medium heat and caramelize the sliced onions for 10-12 minutes until golden brown.
  3. In a large bowl, mix rice, French onion soup, cream of chicken soup, milk, salt, and black pepper.
  4. Fold in the shredded chicken and half of the cheese into the rice mixture.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Top with caramelized onions and the remaining cheese.
  7. Cover with foil and bake for 45 minutes, then remove foil and bake for an additional 10-15 minutes until bubbly.

Notes

Serve with a garnish of fresh thyme or parsley to enhance flavors.
