Ingredients
- 1 cup cottage cheese
- 2 ripe bananas, mashed
- 3 eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- In a large bowl, mix together cottage cheese, mashed bananas, and eggs until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined. Stir in the vanilla extract.
- Heat a non-stick skillet over medium heat and add a little butter or oil.
- Pour a ladle of batter onto the skillet for each pancake. Cook until bubbles form on the surface, flip, and cook until golden brown on both sides.
- Serve warm with your choice of toppings.
Notes
For extra fluffy pancakes, consider letting the batter rest for a few minutes before cooking. Use ripe bananas for optimal sweetness.
