Instructions

  1. In a large bowl, mix together cottage cheese, mashed bananas, and eggs until well combined.
  2. In another bowl, whisk together the flour, baking powder, baking soda, and a pinch of salt.
  3. Gradually add the dry ingredients to the wet mixture and stir until just combined. Stir in the vanilla extract.
  4. Heat a non-stick skillet over medium heat and add a little butter or oil.
  5. Pour a ladle of batter onto the skillet for each pancake. Cook until bubbles form on the surface, flip, and cook until golden brown on both sides.
