Ingredients

  • 2 cups cooked rice
  • 1 lb white fish fillets (tilapia, cod)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 cup shredded cabbage
  • 1/2 cup corn
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/2 cup salsa


Instructions

  1. Preheat your grill or skillet over medium heat.
  2. In a bowl, mix together olive oil, chili powder, cumin, garlic powder, and salt.
  3. Coat your fish fillets with the spice mixture.
  4. Cook the fish for about 3-4 minutes on each side until it flakes easily.
  5. Layer cooked rice in a bowl as the base.
  6. Add shredded cabbage on top of the rice.
  7. Toss in the corn.
  8. Add the cooked fish on top of the vegetables.
  9. Top with diced avocado and cilantro.
  10. Drizzle with lime juice and finish with salsa.
  11. Serve immediately.

Notes

Avoid using frozen fish for the best flavor. Feel free to meal prep components separately.
