Ingredients
- 2 servings of ramen noodles
- 2 chicken breasts, sliced (or tofu)
- 2 tablespoons soy sauce
- 1 tablespoon sriracha (or to taste)
- 4 cups chicken broth
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 cup mushrooms, sliced
- 1 cup spinach
- ½ cup heavy cream
- 2 green onions, chopped
- Sesame seeds for garnish
Instructions
- Cook the ramen noodles according to package instructions. Drain and set aside.
- In a pot, heat some oil over medium heat and sauté garlic and ginger until fragrant.
- Add the sliced chicken breasts and cook until no longer pink.
- Stir in soy sauce and sriracha, mixing well.
- Pour in chicken broth and bring to a simmer.
- Add mushrooms and cook for 5 minutes until tender.
- Stir in spinach and allow it to wilt.
- Reduce heat and add heavy cream, mixing until combined.
- Serve the soup over the cooked ramen noodles and garnish with green onions and sesame seeds.
Notes
Feel free to substitute chicken with shrimp, tofu, or chickpeas. Adjust spice levels with your favorite hot sauce.
