 - ½ teaspoon baking powder

 - 2 to 3 tablespoons cinnamon sugar (3/4 teaspoon cinnamon for every 1 tablespoon of sugar)
 
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
 - In a large mixing bowl, whisk together the egg, granulated sugar, and brown sugar until well combined.
 - Add the canned pumpkin, canola oil, and vanilla extract, blending everything seamlessly.
 - Gradually pour in the flour, baking powder, baking soda, pumpkin pie spice, and salt. Stir until the mixture is smooth and fully incorporated.
 - Pour the batter into the greased loaf pan, spreading it evenly. Sprinkle the cinnamon sugar mixture on top if desired.
 - Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
