Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
  2. In a large mixing bowl, whisk together the egg, granulated sugar, and brown sugar until well combined.
  3. Add the canned pumpkin, canola oil, and vanilla extract, blending everything seamlessly.
  4. Gradually pour in the flour, baking powder, baking soda, pumpkin pie spice, and salt. Stir until the mixture is smooth and fully incorporated.
  5. Pour the batter into the greased loaf pan, spreading it evenly. Sprinkle the cinnamon sugar mixture on top if desired.
