Description

A cozy, spiced soup that tastes like you cared for hours but only actually took about 40 minutes to prepare.


Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons olive oil
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 4 cups vegetable broth
  • Salt to taste
  • Black pepper to taste
  • 1 cup diced tomatoes
  • 1 carrot, diced
  • 1 bell pepper, chopped


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion, garlic, and ginger. Sauté until soft.
  3. Stir in turmeric, cumin, and coriander.
  4. Add lentils, vegetable broth, diced tomatoes, carrot, and bell pepper.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  6. Season with salt and black pepper.
  7. Serve hot with bread or rice.

Notes

For a richer flavor, stir in a spoonful of peanut butter or coconut milk. This soup freezes well for up to 3 months.
