Ingredients
- 1 cup mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 300°F (150°C).
- Grease a cake pan and line with parchment paper.
- In a bowl, combine mixed dried fruits and chopped nuts.
- Cream together unsalted butter and brown sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Sift together flour, baking powder, ground cinnamon, ground nutmeg, and salt in a separate bowl.
- Fold dry ingredients into the butter and sugar mixture until just combined.
- Incorporate the fruit and nut mixture.
- Pour batter into the prepared cake pan and level the top.
- Bake for approximately 90 to 120 minutes, or until a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
