Ingredients

  • 1 cup mixed dried fruits
  • 1 cup chopped nuts
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Grease a cake pan and line with parchment paper.
  3. In a bowl, combine mixed dried fruits and chopped nuts.
  4. Cream together unsalted butter and brown sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Sift together flour, baking powder, ground cinnamon, ground nutmeg, and salt in a separate bowl.
  7. Fold dry ingredients into the butter and sugar mixture until just combined.
  8. Incorporate the fruit and nut mixture.
  9. Pour batter into the prepared cake pan and level the top.
  10. Bake for approximately 90 to 120 minutes, or until a toothpick inserted comes out clean.
