Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Olive oil or cooking spray


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  2. In a mixing bowl, whisk the eggs, then add chopped spinach, feta cheese, bell peppers, onions, salt, and pepper.
  3. Pour the mixture evenly into the muffin cups.
  4. Bake for 18-20 minutes, or until the egg muffins are set and lightly golden.
  5. Let cool for a few minutes before removing from the tin. Serve warm or store in the fridge for meal prep.

Notes
