Description

This Crockpot Ranch Chicken with Vegetables is an easy, comforting one-pot meal made with tender chicken breasts, hearty potatoes, carrots, and a creamy ranch-flavored sauce. Perfect for busy weeknights or cozy family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup diced Yukon gold potatoes
  • 1 cup diced red potatoes
  • 2 cups baby carrots
  • ½ cup sliced onion
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 packet (1 oz) dry ranch dressing mix
  • ½ cup milk (2% or whole)
  • Optional: 1 tbsp dried parsley, 1 tsp dried oregano, ½ tsp paprika
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish


Instructions

  1. Layer Vegetables: Place diced Yukon gold potatoes, red potatoes, baby carrots, and sliced onion at the bottom of the crock pot.
  2. Add Chicken: Place chicken breasts on top of the vegetables.
  3. Make Sauce: In a small bowl, whisk together the condensed cream of chicken soup, milk, ranch dressing mix, and optional herbs and paprika.
  4. Pour Sauce: Evenly pour the creamy mixture over the chicken and vegetables.
  5. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 4 hours, until chicken is tender and cooked through.
  6. Finish: Season with salt and pepper to taste. Garnish with fresh chopped parsley before serving.

Notes

For a thicker sauce, you can remove the lid during the last 30 minutes or stir in a cornstarch slurry. Swap chicken breasts for thighs if desired.
