Description
A delicious twist on traditional tacos combining baked sweet potatoes with hearty taco filling.
Ingredients
- 1 lb. ground beef
- ½ a white onion, chopped
- 2 garlic cloves, minced
- 14.5 oz canned fire roasted diced tomatoes (not drained)
- 1 Tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 2 sweet potatoes
- Olive oil
- Toppings: guacamole, cheddar cheese, pico de gallo, sour cream, etc
Instructions
- Preheat your oven to 425°F (218°C) and line a baking pan with parchment paper. Wash and scrub the sweet potatoes, then poke holes in them with a fork and rub with olive oil, salt, and pepper. Bake for 40-45 minutes until soft.
- In a large sauté pan, heat olive oil over medium-high heat. Add garlic and onions, cooking until tender. Add ground beef and seasonings, cooking until browned. Then add canned tomatoes and continue to cook until most liquid is absorbed.
- Once the potatoes are done, slice them in half lengthwise, fluff the insides, and spoon in the beef filling. Serve warm with your choice of toppings.
Notes
Poke holes in the sweet potatoes before baking to prevent bursting. Customize the beef with ground turkey or chicken for a lighter version.
