Instructions
- Preheat the oven: Set oven to 375°F (190°C).
- Prep tomatoes: Slice the tomatoes and lay them on paper towels. Lightly salt and let them drain for 30 minutes to remove excess moisture.
- Assemble the pie: Layer the drained tomatoes into the pre-baked pie crust. Sprinkle chopped basil and seasonings (salt, pepper, optional garlic powder) between the layers.
- Make the topping: In a bowl, combine the mayonnaise, cheddar, and mozzarella. Mix until smooth.
- Top the pie: Spread the cheese mixture evenly over the top layer of tomatoes.
- Bake: Place the pie in the oven and bake for 30–35 minutes, until the top is golden and bubbling.
- Cool and serve: Let the pie cool slightly before slicing. Serve warm or at room temperature.
Notes
For best results, use firm, ripe tomatoes like heirlooms or beefsteak. You can add a touch of Dijon mustard or hot sauce to the cheese mixture for extra flavor.
