Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 cups mixed bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/2 cup cashews
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine soy sauce, honey, olive oil, garlic, ginger, salt, and pepper.
  3. Add the chicken, bell peppers, broccoli, and snap peas to the bowl, tossing to coat everything evenly.
  4. Spread the chicken and vegetables onto a sheet pan in a single layer.

Notes
