Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 1/2 cup cashews
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine soy sauce, honey, olive oil, garlic, ginger, salt, and pepper.
- Add the chicken, bell peppers, broccoli, and snap peas to the bowl, tossing to coat everything evenly.
- Spread the chicken and vegetables onto a sheet pan in a single layer.
- Sprinkle cashews on top.
- Roast in the oven for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.

Notes
For extra crisp on the chicken, give the pieces a bit of space on the pan. If you want to avoid soggy cashews, add them in the last 5 minutes of roasting.
