Description

A quick and flavorful dish featuring salmon in a creamy coconut curry sauce, perfect for impressing guests or a cozy meal at home.


Ingredients

  • 4 salmon fillets
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 2 cups cooked rice
  • Fresh basil or cilantro for garnish


Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Season the salmon fillets with salt and pepper and pan-sear them for about 4-5 minutes on each side until cooked through. Remove from the pan and set aside.
  3. In the same pan, add the red curry paste and cook for 1-2 minutes until fragrant.
  4. Pour in the coconut milk, fish sauce, sugar, and lime juice. Stir to combine and let it simmer for a few minutes.
  5. Add the salmon back into the pan and spoon the sauce over the top.
  6. Serve the salmon over cooked rice and garnish with fresh basil or cilantro.

Notes

For an extra kick, add more red curry paste or chopped chili peppers. You can replace salmon with tofu for a vegetarian option.
