Ingredients

  • 1 can (15 oz) pumpkin puree
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until onions are translucent, about 3-5 minutes.
  2. Add pumpkin puree, vegetable broth, ground ginger, and ground cinnamon. Bring to a gentle simmer and cook for about 20 minutes.
  3. Remove from heat and stir in the heavy cream.
  4. Blend the soup until smooth using an immersion blender or a regular blender in batches.
  5. Season with salt and pepper to taste, and serve warm.
