Ingredients
- 1 can (15 oz) pumpkin puree
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the chopped onion and minced garlic until onions are translucent, about 3-5 minutes.
- Add pumpkin puree, vegetable broth, ground ginger, and ground cinnamon. Bring to a gentle simmer and cook for about 20 minutes.
- Remove from heat and stir in the heavy cream.
- Blend the soup until smooth using an immersion blender or a regular blender in batches.
- Season with salt and pepper to taste, and serve warm.
