Ingredients
- 2 cups of rice
- 4 chicken breasts
- 4 cups of chicken broth
- 1 tablespoon of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- Salt and pepper to taste
- 1 cup of cilantro
- 1 jalapeno, seeded
- 1 lime, juiced
- 1/4 cup of mayonnaise
Instructions
- Heat olive oil in a pot over medium heat.
- Add the chopped onion and minced garlic, sauté until soft and fragrant.
- Pour in the rice and stir it well to incorporate with the onion and garlic mixture.
- Add the chicken broth, cumin, salt, and pepper. Stir everything together and bring it to a boil.
- Reduce the heat, cover the pot, and let it simmer for 18 minutes or until the rice is tender and has absorbed the broth.
- Prepare the green sauce by blending the cilantro, jalapeno, lime juice, and mayonnaise in a food processor until smooth.
- Grill or bake the chicken until it is fully cooked, usually around 6-8 minutes per side, depending on the thickness.
- Serve the chicken on a bed of rice, generously drizzling the green sauce over the top.
Notes
Consider marinating the chicken in lime juice and spices for extra flavor. Rinse rice before cooking for fluffiness.
