Ingredients

  • 2 cups of rice
  • 4 chicken breasts
  • 4 cups of chicken broth
  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 1 cup of cilantro
  • 1 jalapeno, seeded
  • 1 lime, juiced
  • 1/4 cup of mayonnaise


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until soft and fragrant.
  3. Pour in the rice and stir it well to incorporate with the onion and garlic mixture.
  4. Add the chicken broth, cumin, salt, and pepper. Stir everything together and bring it to a boil.
  5. Reduce the heat, cover the pot, and let it simmer for 18 minutes or until the rice is tender and has absorbed the broth.
  6. Prepare the green sauce by blending the cilantro, jalapeno, lime juice, and mayonnaise in a food processor until smooth.
  7. Grill or bake the chicken until it is fully cooked, usually around 6-8 minutes per side, depending on the thickness.
  8. Serve the chicken on a bed of rice, generously drizzling the green sauce over the top.

Notes
