Ingredients

  • 2 cups of pasta (your choice, such as rotini or penne)
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1 bell pepper, diced (any color)
  • 1/2 red onion, thinly sliced
  • 1/2 cup of black olives, sliced
  • 1/4 cup of fresh parsley, chopped
  • 1/3 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of Dijon mustard
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool it down.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and parsley.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss everything together until well combined.
  5. Let the salad sit for about 15 minutes to allow the flavors to blend.
