Description
Golden, crispy oven-baked zucchini fries with a seasoned Parmesan breadcrumb coating. A healthy and flavorful side dish or snack, perfect with marinara, aioli, or ranch dipping sauce.
Ingredients
- 4 medium zucchini (about 1 to 1¼ lbs)
- ¼ cup all-purpose flour (or gluten-free 1-to-1)
- 1 large egg
- 1 tablespoon milk (dairy or plant-based)
- ½ cup fine plain breadcrumbs
- ½ cup finely grated Parmesan cheese
- 1 teaspoon salt (to taste)
- ¼ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- Chopped parsley for garnish (optional)
Instructions
- Preheat oven: Set oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cut zucchini: Trim ends and cut each zucchini lengthwise into quarters to form fry-shaped sticks.
- Prepare breading stations:
- Bowl 1: Add flour
- Bowl 2: Whisk egg and milk together
- Bowl 3: Mix breadcrumbs, Parmesan, salt, pepper, Italian seasoning, and garlic powder
- Bread the zucchini: Dredge each zucchini stick in flour (shake off excess), dip into egg wash, then coat with the breadcrumb-Parmesan mixture, pressing gently to adhere.
- Arrange & Bake: Place coated zucchini fries in a single layer on the baking sheet. Optionally spray lightly with cooking oil for extra crispiness. Bake for 18–20 minutes, flipping halfway through.
- Serve: Serve hot, garnished with chopped parsley if desired. Accompany with marinara, garlic aioli, or ranch dressing.
Notes
Make them gluten-free by using 1-to-1 GF flour and GF breadcrumbs. Use a wire rack for baking if you want extra crispiness on all sides.
