Ingredients

  • 8 oz pasta (such as penne or fusilli)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, and bell pepper; sauté until softened.
  2. Add the pasta, diced tomatoes, chicken broth, and Cajun seasoning to the pot. Stir well and bring to a boil.
  3. Reduce heat to a simmer, cover, and cook for about 10-12 minutes, or until the pasta is tender and the liquid is mostly absorbed.
  4. Stir in the heavy cream and cheese, mixing until melted and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley if desired.
