Ingredients
- 8 oz pasta (such as penne or fusilli)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) diced tomatoes
- 2 cups chicken or vegetable broth
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, and bell pepper; sauté until softened.
- Add the pasta, diced tomatoes, chicken broth, and Cajun seasoning to the pot. Stir well and bring to a boil.
- Reduce heat to a simmer, cover, and cook for about 10-12 minutes, or until the pasta is tender and the liquid is mostly absorbed.
- Stir in the heavy cream and cheese, mixing until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
