Description

Healthy and tasty mini meatloaves made with ground turkey, perfect for portion control and busy weeknights.


Ingredients

  • 2 tablespoons olive oil – divided
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1 pound ground turkey
  • 1 large egg – lightly beaten
  • 1/3 cup breadcrumbs
  • 1 tablespoon ketchup
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup ketchup (for topping)
  • 1 tablespoon chili sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper – to taste


Instructions

  1. Preheat the oven to 400°F and line a medium-sized baking sheet with parchment paper.
  2. Heat a sauté pan over medium heat and add one tablespoon of olive oil. Cook the diced bell peppers and onions until soft, about 3-4 minutes. Set aside to cool.
  3. In a large mixing bowl, combine the ground turkey, egg, breadcrumbs, ketchup, the remaining tablespoon of oil, mustard, Worcestershire sauce, garlic powder, Italian seasoning, salt, and pepper. Mix in the cooked veggies.
  4. Form the mixture into 4-5 mini loaves and place them on the parchment-lined baking sheet.
  5. For the glaze, mix ketchup, chili sauce, maple syrup, and Worcestershire sauce in a bowl. Brush over the mini meatloaves.
  6. Bake for 20-25 minutes until the internal temperature reaches 165°F. Let rest for at least 5 minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for future meals.
