Easy Low Carb Pizza Casserole

Description

A comforting low-carb twist on traditional pizza, combining all your favorite flavors into a warm, satisfying casserole.


Ingredients

  • 1 pound ground beef or sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (14 ounces) low-carb pizza sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, heat the olive oil and sauté the chopped onions and minced garlic until fragrant and translucent, about 3-4 minutes.
  3. Add the ground beef or sausage, cook until browned, and drain excess fat if necessary.
  4. Stir in the chopped red bell pepper, pizza sauce, oregano, basil, and season with salt and pepper. Allow to simmer for about 5 minutes.
  5. In a greased 9×13-inch baking dish, layer half of the meat mixture, sprinkle with 1 cup of mozzarella cheese and half of the pepperoni (if using). Repeat with remaining meat mixture, cheese, and pepperoni on top.
  6. Bake for about 20-25 minutes, until the cheese is bubbly and slightly golden.
  7. Allow to cool for a few minutes, slice into squares, and serve warm.

Notes

Let the casserole rest a few minutes after baking for better slicing. Customize toppings to suit your taste.
