Ingredients
- 1 pound ground beef or sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (14 ounces) pizza sauce (look for a low-carb option)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups shredded mozzarella cheese
- 1 cup sliced pepperoni (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) to preheat.
- Sauté the Vegetables: In a skillet over medium heat, heat the olive oil. Add onions and garlic, sautéing until fragrant and translucent, about 3-4 minutes.
- Cook the Meat: Add ground beef or sausage, breaking it up while cooking until browned. Drain excess fat if necessary.
- Mix in the Seasoning and Veggies: Stir in red bell pepper, pizza sauce, oregano, basil, and season with salt and pepper. Simmer for about 5 minutes.
- Assemble the Casserole: In a greased 9×13 inch baking dish, layer half of the meat mixture, sprinkle with 1 cup mozzarella cheese, and add half of the pepperoni if using. Repeat the layers.
- Bake: Place in preheated oven and bake for 20-25 minutes until the cheese is bubbly and slightly golden.
- Cool and Serve: Let it cool for a few minutes, then slice into squares and serve warm.
