Description

Ingredients

  • 1 cup lentils
  • 2 large potatoes, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the diced carrots and potatoes, stirring for another few minutes.
  4. Stir in the lentils, cumin, salt, and pepper.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for about 30-40 minutes until lentils and potatoes are tender.
  7. Adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.

Notes

Rinse lentils before cooking and feel free to add more spices or vegetables for variety. Blend part of the soup for a creamier texture.
