A comforting and nutritious soup made with lentils, potatoes, and carrots, perfect for chilly days.
Ingredients
- 1 cup lentils
- 2 large potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- Add the diced carrots and potatoes, stirring for another few minutes.
- Stir in the lentils, cumin, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for about 30-40 minutes until lentils and potatoes are tender.
- Adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
Rinse lentils before cooking and feel free to add more spices or vegetables for variety. Blend part of the soup for a creamier texture.
