Description
A light and refreshing chicken salad made with lemon, basil, and your choice of olive oil or Greek yogurt. Perfect for meal prep, picnics, or as a quick protein-packed lunch.
Ingredients
- 2 cups cooked chicken breast (grilled, shredded, or poached)
- 1/4 cup fresh basil, finely chopped
- Juice and zest of 1 large lemon
- 2 tablespoons olive oil or Greek yogurt
- 1/4 cup chopped celery (optional)
- 1/2 cup red grapes or apple chunks (optional)
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Cook chicken (grill, poach, or use leftover), let cool, and shred or dice.
- Make the Dressing: In a bowl, whisk together lemon juice, zest, olive oil or Greek yogurt, salt, and pepper.
- Mix the Salad: In a large mixing bowl, combine chicken, basil, celery, grapes (optional), and the dressing. Toss until well coated.
- Chill and Serve: Refrigerate for at least 20 minutes to allow flavors to meld. Serve cold.
Notes
For added crunch, top with toasted almonds or chopped walnuts. This salad keeps well in the fridge for up to 3 days and pairs great with lettuce wraps or whole grain bread.
