Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed and cut
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, carrots, and celery; sauté until the vegetables are softened.
  3. Pour in the chicken broth and bring to a boil.
  4. Once boiling, add the chicken breasts, thyme, green beans, salt, and pepper.
  5. Reduce heat and let everything simmer for 20-25 minutes, until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Serve hot, garnished with fresh parsley.

Notes

For a creamier soup, add a splash of heavy cream just before serving. Use fresh herbs for the best flavor.
