Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup green beans, trimmed and cut
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrots, and celery; sauté until the vegetables are softened.
- Pour in the chicken broth and bring to a boil.
- Once boiling, add the chicken breasts, thyme, green beans, salt, and pepper.
- Reduce heat and let everything simmer for 20-25 minutes, until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Serve hot, garnished with fresh parsley.
Notes
For a creamier soup, add a splash of heavy cream just before serving. Use fresh herbs for the best flavor.
