Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 potatoes, diced
- 4 cups beef broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and garlic, and sauté until translucent.
- Add the ground beef and cook until browned.
- Stir in the carrots and potatoes, and cook for a few minutes.
- Pour in the beef broth, add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30-40 minutes, until vegetables are tender.
- Adjust seasoning if necessary and serve hot.
Notes
Serve hot in a bowl and top with fresh parsley. Pairs well with crusty bread or rice.
