Ingredients

  • 8 oz whole wheat penne or fettuccine
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lb boneless skinless chicken breasts, cubed
  • Salt and black pepper, to taste
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 tbsp whole wheat flour
  • 1 cup low-sodium chicken broth
  • 1/2 cup low-fat milk (1% or 2%)
  • 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups baby spinach (optional but recommended)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a frying pan over medium heat. Add garlic and sauté for about 30 seconds until fragrant.
  3. Add the cubed chicken breasts, season with salt, black pepper, paprika, and Italian seasoning. Cook until the chicken is golden and fully cooked, approximately 6-8 minutes.
  4. Sprinkle flour over the chicken, stirring gently to coat. Slowly pour in the chicken broth while continuously stirring to create a smooth mixture.
  5. Gradually add milk and continue stirring until the sauce slightly thickens. Reduce the heat and incorporate the Greek yogurt, followed by the grated Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
  6. Add the drained pasta to the chicken and sauce mixture in the pan, stirring to coat the pasta evenly.
  7. Stir in the baby spinach until it wilts into the sauce. Garnish with chopped fresh parsley.
  8. Serve immediately and enjoy!

Notes

  • Ensure the garlic doesn’t burn as it can turn bitter.
  • If the sauce is too thick, add a little more chicken broth or milk to reach your desired consistency.
