- Make the Cream Cheese Layer: In a bowl, beat softened cream cheese, sugar, and vanilla extract until smooth and creamy. Spread evenly over the cooled cookie crust.
- Add the Fruit: Arrange sliced fresh fruit on top of the cream cheese layer in concentric circles, stripes, or decorative patterns. Press lightly into the frosting.
- Glaze the Fruit: Warm apple jelly in a small pan or microwave until smooth. Using a pastry brush, gently coat the fruit with the glaze for shine and to help preserve freshness.
- Chill & Serve: Refrigerate the assembled fruit pizza for 1–2 hours before serving. Slice with a pizza cutter or sharp knife and enjoy!
