- For the Sugar Cookie Crust:
- 1½ cups all-purpose flour
- 1½ tsp cornstarch
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- For the Cream Cheese Frosting:
- 8 oz brick-style cream cheese, softened
- 3 tbsp unsalted butter, softened
- 1¼ cups powdered sugar
- 1 tsp pure vanilla extract
- Toppings:
- ~3 cups assorted sliced fresh fruit (strawberries, blueberries, kiwi, mango, grapes, etc.)
Instructions
- Make the Crust: In a bowl, whisk together flour, cornstarch, baking powder, and salt. In a separate bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually combine wet and dry ingredients. Chill dough for 20 minutes.
- Press dough into a 9–10-inch circle on a greased baking pan. Bake at 350°F (177°C) for 17–19 minutes or until lightly golden. Let cool completely.
- Make the Frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until creamy.
- Assemble the Pizza: Spread frosting evenly over the cooled crust. Arrange sliced fruit on top in rings or patterns. Slice and serve immediately, or refrigerate until ready to serve.
Notes
- Use brick-style cream cheese, not whipped, for best consistency.
- The crust and frosting can be prepared in advance and assembled just before serving.
- Pat fruit dry to prevent excess moisture from softening the crust.
