  • 1 tsp pure vanilla extract
  • For the Cream Cheese Frosting:
  • 8 oz brick-style cream cheese, softened
  • 3 tbsp unsalted butter, softened
  • 1¼ cups powdered sugar
  • 1 tsp pure vanilla extract
  • Toppings:
  • ~3 cups assorted sliced fresh fruit (strawberries, blueberries, kiwi, mango, grapes, etc.)

Instructions

  1. Make the Crust: In a bowl, whisk together flour, cornstarch, baking powder, and salt. In a separate bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually combine wet and dry ingredients. Chill dough for 20 minutes.
  2. Press dough into a 9–10-inch circle on a greased baking pan. Bake at 350°F (177°C) for 17–19 minutes or until lightly golden. Let cool completely.
  3. Make the Frosting: Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and beat until creamy.
  4. Assemble the Pizza: Spread frosting evenly over the cooled crust. Arrange sliced fruit on top in rings or patterns. Slice and serve immediately, or refrigerate until ready to serve.
