- 8 oz refrigerated cheese tortellini
- 2 cups fresh spinach
- ½ cup sour cream
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
- Grated parmesan (optional)
Instructions
- Boil the tortellini according to package directions (usually 3–5 minutes). Drain and set aside.
- In a large pan, heat olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the spinach and cook until wilted (1–2 minutes).
- Lower the heat and add the sour cream, stirring to combine into a smooth sauce.
- Add the cooked tortellini and gently toss until coated in the sauce.
- Season with salt and black pepper to taste.
- Top with grated parmesan if desired and serve hot.
Notes
You can substitute Greek yogurt for sour cream for a lighter version. Add red pepper flakes or nutmeg for a flavor boost. Serve with garlic bread or salad for a full meal.
