A bright and fresh twist on the classic Caprese salad, this version adds crisp cucumber and a tangy balsamic drizzle — perfect as a quick side or light lunch.
Ingredients
- 1 English cucumber (sliced into bite-sized pieces)
- 2 cups cherry or grape tomatoes (halved)
- 8 oz fresh mozzarella pearls (or chopped fresh mozzarella)
- 1/3 cup fresh basil leaves (torn)
- 1/3 cup balsamic vinaigrette or balsamic glaze
- Optional Add-ins:
- Sliced red onion
- Avocado cubes
- Grilled chicken or shrimp
- Olive oil drizzle
- Basil pesto
Instructions
- Prep the cucumber: Slice the English cucumber in half lengthwise, then again into quarters. Chop into bite-sized chunks. Optionally, peel the skin for a softer texture.
- Combine ingredients: In a medium bowl, add the cucumber, tomatoes, and mozzarella pearls.
- Add herbs and dressing: Tear basil leaves and add them in. Drizzle with balsamic vinaigrette or glaze. Toss gently to coat.
- Serve or chill: Serve immediately or refrigerate for up to 2 hours before serving.
Notes
This salad is easy to customize — add avocado or grilled protein for a heartier dish. If using balsamic glaze, reduce other sweeteners in your meal to keep the balance.
