Ingredients

  • 1 English cucumber (sliced into bite-sized pieces)
  • 2 cups cherry or grape tomatoes (halved)
  • 8 oz fresh mozzarella pearls (or chopped fresh mozzarella)
  • 1/3 cup fresh basil leaves (torn)
  • 1/3 cup balsamic vinaigrette or balsamic glaze

  • Avocado cubes

Instructions

  1. Prep the cucumber: Slice the English cucumber in half lengthwise, then again into quarters. Chop into bite-sized chunks. Optionally, peel the skin for a softer texture.
