Easy Crispy Oven Roasted Chickpeas

Description

Crispy oven roasted chickpeas are a delicious and healthy snack that are easy to make and packed with protein and fiber.


Ingredients

  • 2 (15 oz) cans low-sodium chickpeas, drained and rinsed well
  • 1-2 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt, plus more for topping
  • 1/4 teaspoon ground black pepper


Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Drain and rinse the chickpeas. Spread them out onto a dry kitchen towel and pat them dry with a paper towel. Transfer them to the baking sheet and spread them out. Let them sit on the baking sheet for 5-10 minutes to dry even more.
  3. In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, salt, and pepper.
  4. Drizzle the olive oil over the chickpeas and toss them to coat in the oil. Sprinkle the seasoning mix over the chickpeas and toss again to coat all of them.
  5. Spread the seasoned chickpeas in a single layer on the baking sheet. Roast them for 25-30 minutes, tossing and shaking the pan every 10 minutes to make sure they turn golden brown on all sides.
  6. Once they are cooked, remove them from the oven and let them cool on the pan for 5-10 minutes. Serve hot with a sprinkle of sea salt.

Notes

Make sure to dry the chickpeas well; the drier they are, the crispier they will get. Experiment with different spices for varied flavors.
