Description
Crispy oven roasted chickpeas are a delicious and healthy snack that are easy to make and packed with protein and fiber.
Ingredients
- 2 (15 oz) cans low-sodium chickpeas, drained and rinsed well
- 1-2 tablespoons olive oil or avocado oil
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cumin
- 1/2 teaspoon kosher salt, plus more for topping
- 1/4 teaspoon ground black pepper
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Drain and rinse the chickpeas. Spread them out onto a dry kitchen towel and pat them dry with a paper towel. Transfer them to the baking sheet and spread them out. Let them sit on the baking sheet for 5-10 minutes to dry even more.
- In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, salt, and pepper.
- Drizzle the olive oil over the chickpeas and toss them to coat in the oil. Sprinkle the seasoning mix over the chickpeas and toss again to coat all of them.
- Spread the seasoned chickpeas in a single layer on the baking sheet. Roast them for 25-30 minutes, tossing and shaking the pan every 10 minutes to make sure they turn golden brown on all sides.
- Once they are cooked, remove them from the oven and let them cool on the pan for 5-10 minutes. Serve hot with a sprinkle of sea salt.
Notes
Make sure to dry the chickpeas well; the drier they are, the crispier they will get. Experiment with different spices for varied flavors.
