Description

A comforting and hearty casserole that combines cornbread with meat, black beans, and sweet corn, perfect for any family gathering or weeknight dinner.


Ingredients

  • 2 cups cornbread mix
  • 1 cup milk
  • 2 large eggs
  • 1 can sweet corn, drained
  • 1 can black beans, rinsed and drained
  • 1 pound ground beef or turkey
  • 1 cup diced tomatoes (canned or fresh)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped green onions, or jalapeños


Instructions

  1. Preheat the oven to 350°F (about 175°C).
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat. Season with taco seasoning, salt, and pepper. Stir in the diced tomatoes and simmer for a few minutes.
  3. In a bowl, whisk together the cornbread mix, milk, and eggs until smooth.
  4. In a greased 9×13 inch baking dish, layer half of the cornbread batter on the bottom. Spread the cooked meat mixture over the batter, followed by the sweet corn and black beans. Pour the remaining cornbread batter on top, spreading it gently.
  5. Sprinkle shredded cheddar cheese over the top. Bake in the preheated oven for 30 to 35 minutes or until golden brown.
  6. Allow the casserole to cool for about 10 minutes before slicing.

Notes

For added flavor, consider sautéing some onions and bell peppers with the ground meat. Adjust spices to your preference for added heat.
