Easy Cowboy Cornbread Casserole

Description

A comforting one-dish meal combining cornbread with hearty fillings, perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 cups of cornbread mix
  • 1 cup of milk
  • 2 large eggs
  • 1 can of sweet corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 pound of ground beef or turkey
  • 1 cup of diced tomatoes (canned or fresh)
  • 1 packet of taco seasoning
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped green onions, or jalapeños


Instructions

  1. Preheat your oven to 350°F (about 175°C).
  2. In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat, then season with taco seasoning, salt, and pepper. Stir in diced tomatoes and simmer.
  3. In a bowl, whisk together the cornbread mix, milk, and eggs until smooth.
  4. In a greased 9×13 inch baking dish, layer half of the cornbread batter on the bottom. Spread the cooked meat mixture over it, followed by sweet corn and black beans. Pour the remaining cornbread batter on top.
  5. Sprinkle shredded cheddar cheese over the top and bake for about 30 to 35 minutes, until golden brown.
  6. Allow to cool for about 10 minutes before slicing.

Notes

Ensure to grease your baking dish well for easy removal of the casserole. Consider sautéing onions and bell peppers for added flavor. Adjust spices based on preference.
